Quick and healthy vegetarian broccoli recipe

Vegetarian food recipes are not hard to come by, but there is also a tendency to gorge on bad carbs and processed foods once one tries to go meatless. I am confident that lack of food ideas causes this. My vegetarian broccoli recipe is one of the many that I cook this superfood such that everyone at home can enjoy it (including the kids).

What do you need to make the vegetarian broccoli recipe

A good non-stick frying pan would be a good investment:


The recipe can be a side dish or a vegetarian broccoli salad; it is up to you how you serve it. It requires very few ingredients i.e.

  • 2 x cloves of garlic (chopped)
  • 1/2 x teaspoon of cumin
  • 2 x tablespoons of oil (I exclusively use coconut oil in all my cooking)

Heat the oil in a frying pan and fry all the above ingredients together. By now you can speculate that your vegetarian broccoli recipe will be tasty and delicious.

You will also need:

  • 1 x cup of broccoli florets
  • 1/2 x cup of chopped carrots
  • 1/2 x cup of sweetcorn

Add these to the frying pan and saute until they are adequately cooked. Add salt and pepper to taste.

You can consume this vegetarian broccoli recipe as a side dish, or sprinkle lentils, split peas or any other high protein source to have a balanced meal. For Lacto-ovo vegetarians, dicing an egg and adding it in will also provide a wholesome dinner.

This vegetarian broccoli recipe is my go-to dish when I am looking for something quick, healthy, and meat-free. Easily sprinkle plant-based protein sources like lentils or split peas to turn it into a full, balanced meal.

Ingredients:

 

  • 2 cloves of garlic
  • 1/2 tspn cumin
  • 2 tbsp coconut oil (any oil of choice)
  • 1 cup broccoli florets
  • 1/2 cup chopped carrots
  • 1/2 cup sweetcorn

Instructions:

 

  1. Heat oil on the stove
  2. Fry garlic and season with cumin
  3. Cut broccoli into florets, and chop the carrots
  4. Add to the frying pan together with theĀ  sweetcorn
  5. Saute until cooked
  6. Add salt and pepper to taste
