My creamy vegan broccoli soup recipe
This creamy vegan broccoli soup recipe started out as my experiment when I was not feeling like cooking an elaborate dinner for the family. It has turned out to be so yummy and filling, that I had to write it out as I plan to make it again, in bulk this time. The soup is healthy, and low in calories.

Instructions
  1. Saute onion in oil until tender – season with salt and pepper
  2. Add broccoli florets, frozen peas, and water and boil until soft
  3. Cool off and transfer to a blender (with the cooking water)
  4. Add coconut oil to the blender and blend to your desired texture
  5. Transfer to the stove for reheating. Test the seasoning and ensure it is according to your tastes
  6. Garnish with parsley (when serving)
