When you think about creamy soup, the first thing that pops up is creamy vegan broccoli souphow as a vegan you are limited since you can’t use dairy cream. Cutting out dairy is a choice that my health made for me, so I had to be creative.

Fortunately for me, the food industry caught up very quickly and has become accommodative to the needs of the dairy-free lifestyle.

I’m on a similar journey, so I have to think fast before I eat bad foods.

This vegan creamy broccoli soup did not take much time to whip up, and I would classify it under “beginner vegan meals” if such a thing exists.

What do you need to make the creamy vegan broccoli soup

This easy vegan broccoli soup does not require much. A stove, pot, and blender will do. Mine is not exactly top of the range, so I bet any decent brand will work just fine. I also love the soup makers lately. They are handy if you are a busy person. A typical soup maker should be able to chop and cook your creamy vegan broccoli while you are working on something else.


It helps to cook your soup in bulk and keep some frozen for those days when you are not up to cooking a healthy meal from scratch. Soup freezers will be of much help in this instance.

Making the healthy vegan broccoli soup

This healthy vegan broccoli soup is a 3-4 ingredient recipe. You need onion, broccoli, frozen peas, and coconut milk. I only seasoned it with salt and pepper, and it was perfect for me. I am weary of spices since I am trying to watch the sugar content of my meals.
The peas do add to the creamy texture on the soup; otherwise, they are not necessary. I’m mentioning this because I also guard the carb content in my meals (which is not a problem as the peas have 4g of carbs and 7.5 fiber per 100g).
One can forego them and use coconut cream instead of the milk to double up on the creamy texture.

Instructions for the easy vegan broccoli soup

Chop the onion finely. I always invest in an onion chopper as I can’t stand the burning sensation in my eyes (and the smell of onion in my hands – it takes time to come off). Below is my favorite. It is dirt cheap and effective:


Fry the onion in your choice of oil until tender, add broccoli, peas, and water to boil the vegetables until they are tender. Season with salt and pepper to taste. Once cooked, cool them off a bit and transfer everything to the blender (including the water). Add coconut oil (cream) and blend to your desired texture. You can move the mixture back to the pot for reheating. Ensure that the seasoning is just right for your taste buds.

The sweet spot with this creamy vegan broccoli soup is that it is almost pure veggies, so it definitely counts towards your daily requirements – and a perfect way to get your kids to down some vegetables 🙂

This creamy vegan broccoli soup recipe started out as my experiment when I was not feeling like cooking an elaborate dinner for the family. It has turned out to be so yummy and filling, that I had to write it out as I plan to make it again, in bulk this time. The soup is healthy, and low in calories.

Instructions
  1. Saute onion in oil until tender - season with salt and pepper
  2. Add broccoli florets, frozen peas, and water and boil until soft
  3. Cool off and transfer to a blender (with the cooking water)
  4. Add coconut oil to the blender and blend to your desired texture
  5. Transfer to the stove for reheating. Test the seasoning and ensure it is according to your tastes
  6. Garnish with parsley (when serving)
