Best Vegan Mushroom Soup
This easy vegan mushroom soup can be adapted to lacto ovo vegetarians by using dairy cream in place of the coconut cream/milk.

Ingredients

  1. Preheat oil in a saucepan
  2. Add finely chopped onion and mushrooms and saute
  3. Add salt to taste, and cook for 10 minutes
  4. Boil potatoes aside for 10 minutes
  5. Transfer onion and mushrooms from the saucepan to the potato pot
  6. Cook for 5 more minutes
  7. Blend until smooth (you can use a potato masher/hand blender or an electric blender)
  8. Add 200 ml of coconut cream
  9. Mix well and bring to a boil.
  10. Serve with bread of your choice
